Asian Eggplant Salad
- 2 whole eggplants, roasted in the oven
- 1 spring onion cut into rings
- 1 red pepper diced into small cubes
- 1 red onion diced into small cubes
- 2 celery stalks diced into small cubes
- Handful of finely chopped basil leaves
- ¼ cup of Tamara Seasoning and Cooking Sauce
- For garnish: toasted white sesame
Mix all ingredients in a bowl.
Add the sauce.
Garnish with toasted sesame, hot chili pepper and spring onion.
